Rhubarb Gimlet
Rhubarb is a versatile cocktail ingredient because it’s so versatile; it can be earthy or bright, sweet or tart, solid or liquid. This compote is perfect for this simple daisy-style cocktail, or for your morning toast.

TIME: 5 MIN + 15 MIN FOR COMPOTE
GLASSWARE: LOWBALL
Recipe:
2 oz Ida Graves Vodka
½ oz Fresh Lemon Juice
1 Tbsp. Rhubarb Compote *
INSTRUCTIONS:
Combine all ingredients in a shaker tin, add ice, and short shake, for about 5 seconds. Pour directly into a lowball glass, ice and all (known as ‘rolling’ into the glass).
RHUBARB COMPOTE:
4 Cups Cubed Rhubarb
1 Cup Sugar
1 Tsp. Salt
Add all ingredients into a saucepan and cook on low heat until soft. Transfer rhubarb solids to a bowl and reserve. Also great as a spread.
