Peas to Meet You

RECIPE:
2 oz Far North Spirits Sölveig Gin or
Anna’s Garden Gin¾ oz Fresh Lemon Juice
¾ oz Honey Syrup *
2 Snow Pea Pods
3 Mint Leaves
INSTRUCTIONS:
Lightly muddle peas and mint. Add remaining ingredients in a shaker tin with ice. Shake hard; strain into a chilled coupe glass. Garnish with a mint leaf.
HONEY SYRUP:
2 parts honey
1 part water
Combine ingredients in a bottle with a closure. Shake to combine (leaving the bottle in the sun for 30 minutes first, if you have time). Use right away or refrigerate for up to 2 weeks.
