The Peas Knees
“I love putting peas in cocktails. This cocktail is inspired by a cocktail from a competition I got to judge a few years ago. My good friend Nick Pascuzzi made a drink with a bunch of herbs and green things, including peas.
I usually don't advocate muddling too often, but sometimes it's necessary.”

DIFFICULTY: EASY
TIME: 5 MIN + 10 MIN FOR SYRUP
GLASSWARE: Coupe
Recipe:
¾ oz Honey Simple Syrup (regular simple is OK)
¾ oz Fresh Lemon Juice
5 Mint Leaves, Torn
3 Snap Peas, "Snapped" in Half
1 Pinch Salt
INSTRUCTIONS:
In a mixing tin, add the snap peas and muddle briefly. Add remaining ingredients and shake HARD on good ice. Strain into preferred glass, either up or on the rocks. Garnish with a spanked mint leaf.
Honey Simple Syrup:
In a saucepan combine:
1 cup honey
1 cup water
Bring to a boil over medium-high heat, then continue to simmer for 2-3 minutes until honey is completely dissolved. Remove from heat, then cool. Use right away or refrigerate for up to 2 weeks.
