Stubborn Mule

No, not all Mule cocktails are made from vodka.

The new Herbie's on the Park (named for Minnesota hockey legend Herb Brooks) actually features a stable of different style mules -- from a smoky mezcal-based recipe, to a bitter Campari-based recipe, to this week's Stubborn Mule: a bourbon-based cocktail.

The Stubborn Mule has a good kick of bourbon that's brightened up by a splash of fresh-squeezed lemon juice (not lime; lime and bourbon aren't exactly friends).  It's all topped off with ginger beer -- but not any ginger beer will do.  Bar manager Kris Gigstad prefers Minneapolis-made Earl Giles ginger beer; but, if you can't find that, choose a balanced ginger beer that contains some earthiness.

The result is an afternoon sipper that isn't overpowered by bourbon or ginger spice.

Shake bourbon and lemon juice together briefly, over ice.  Strain into copper Mule mug filled with fresh ice.  Top with ginger beer, and garnish with a cherry.
