Death in the Afternoon

Death in the Afternoon is a classic brunch cocktail that's a great alternative to the safety-school of brunch drinks: the Mimosa.

Essentially an absinthe-heavy champagne cocktail, it's surprisingly well balanced given the full ounce of absinthe it contains.  Essential oils from the orange-twist garnish hint to the nose that, despite being more complex and savory than the Mimosa, it's still breakfast time.

Instructions:

Combine absinthe, simple syrup, and bitters in a shaker tin.  Shake over ice, briefly. Strain into a champagne flute, and top with sparkling wine.  Garnish with an orange twist.
