Lex Cup

Pimms liqueur has a long history as the cocktail of British sport -- from Wimbledon to polo and beyond.  There have been several different formulations over the years--each flavored with different botanicals, and each titled with a number--but only the original Pimms #1 is distributed in the U.S.

A rum-based liqueur with citrus notes, Pimms #1 is usually served in a cocktail named Pimms Cup.  Its refreshing summertime flavors are enhanced with house-infused cucumber vodka in the "Lex Cup" version.


Recipe:

  • 1 oz Pimm's #1
  • 1 oz cucumber vodka *
  • 1 oz lemon sour mix **

* To infuse your own cucumber vodka: peel and slice 1 English or seedless cucumber, and add to 1 liter of premium vodka.  Allow to rest in a refrigerated air-tight container for 2 weeks; shake or agitate daily.  Strain and store in the original vodka bottle.  Refrigerate. Shelf life 1 month.
 

** To make Lemon Sour: combine equal parts lemon juice and simple syrup.

Instructions:

Combine all ingredients in a lowball glass with ice, and top with a spritz of ginger ale and club soda.  Garnish with cucumber and orange slice, mint sprig and quartered strawberry.
